Before Savoiardi became the go-to biscuit, tiramisu was made with homemade sponge-like cookies, or in poorer homes, even day-old bread soaked in coffee.

Prepare the cream
Separate the egg whites from the yolks.
Beat the yolks with sugar until light and fluffy. Add the mascarpone and mix until smooth.
In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture using a spatula.
Place the cream in the fridge to rest while you prepare the coffee and biscuits.







Assemble the tiramisu
Dip the Savoiardi biscuits briefly in the coffee (one second per side – don’t let them soak too long or they’ll fall apart).
Place a layer of soaked biscuits on the bottom of your dish.
Cover with a layer of mascarpone cream.
Repeat with a second layer of biscuits and finish with the remaining cream.
Level the surface with a spatula.





Let it rest and serve
Refrigerate for at least 3–4 hours (or overnight for best results).
Before serving, dust generously with unsweetened cocoa powder.

Tips
- Always use very fresh eggs, as this is a no-bake dessert.
- For a more intense flavor, you can add a tablespoon of Marsala wine or coffee liqueur to the coffee.
- You can also serve it in single cups or glasses for an elegant presentation.
